Modelling and Predicting the Growth of Escherichia coli and Staphylococcus aureus in Co-Culture with Geotrichum candidum and Lactic Acid Bacteria in Milk

The growth of two pairs co-cultures (Escherichia coli/Geotrichum candidum and Staphylococcus aureus/Geotrichum candidum) with a starter culture lactic acid bacteria was studied in milk at temperatures ranging from 15 °C to 21 °C, related the ripening artisanal cheese. For an inoculum approximately 106 CFU/mL, LAB not only induced early stationary phase E. coli (two isolates BR PS2) S. aureus (isolates 2064 14733) but also affected their death phase. In G. candidum, numbers increased 2 logs 1 log, respectively, reaching maximum population densities (MPDs) less than 5 4 logs, respectively.
